The vitamin C from the kiwi and mango in this smoothie help your body absorb the high levels of iron in the leafy greens, while the healthy fat in the avocado will help you absorb the carotenoids from both the fruit and greens.
Yield: 2 servings
Ingredients:
1 small mango, pitted and peeled
1 kiwi, peeled
2 cups leafy greens of choice
1 avocado, pitted and peeled
1 large ripe banana
Directions: Place all ingredients in a blender with enough water to blend to desired consistency. Blend until smooth. Enjoy!
How do you avoid big chunks of the greens left behind in the smoothie? Maybe its time for a new blender…Kids won’t drink with the big chunks..
I haven’t had that problem so I think it might be your blender. Have you tried putting the greens in first and blending them with a bit of liquid for a minute before adding the other ingredients? This method might help minimize the chunks – I don’t blame your kids for being put off, I wouldn’t want to drink chunky smoothies either!
